Kiwi Chicken

For 4 peoplePreparation: 15 minutesCooking: 30 minutes


4 kiwis
8 potatoes (Charlottes or Maris Peers)
3-4 chicken breasts
2 table spoons of raisins
1 table spoon of olive oil
salt, pepper
1 tea spoon of curry

Put the potatoes in a saucepan filled with cold water with a bit of salt. Bring to a boil then let them cook for 10 minutes. Take them our of the water, peel them and dice them.

Peel and dice the kiwis.

Slice the chicken breasts thinly.

Heat the pan with the olive oil and brown the potatoes on medium heat, while stirring regularly. When the potatoes start to get golden-brown, add the chicken and the curry, then keep cooking about 8 minutes.

Add salt and pepper, then the kiwis and the raisins, and let it cook for another 5 minutes.

Serve hot.

Apple, Maple Syrup and Brazil Nuts Loaf Cake

3 eggs
130 gr (4.6 oz) of butter
130 gr (4.6 oz) of brown sugar
160 gr (5.6 oz) of flour
1 table spoon of baking powder
2 table spoons of maple syrup
2 big apples (about 400 gr (14 oz))
60 gr (2 oz) of Brazil nuts


1. Take the butter and the eggs out of the fridge about half an hour before starting. (If you forget, it’s not a big deal, it just makes things easier, especially for the butter).

2. Peel the apples, take out the core and the pips, then dice them. Crudely chop the Brazil nuts.

3. In a bowl, work the butter and the sugar with your fingers. Then, using a whip, add in the eggs, 140 gr (5 oz) of the flour and the baking powder. Finally, add the maple syrup and the nuts, and stir.

4. Pour the rest of the flour on the apple dice and stir until all the flour sticks to the apple. add the floured apples to the dough, then put it to rest in the fridge for 30 minutes.

5. Pre-heat the oven on 180°C/360°F (th.6). Put greaseproof paper in the loaf tin or butter and flour it, then pour the dough in. Put in the oven and bake for 45 minutes.

6. Check that it’s cooked with the tip of a knife: it must come out clean. Take the cake out, let it cool down a little and take the loaf tin off. Let the loaf cake finish to cool down.
